Brunswick, GA – For most final exams, students are huddled in groups or filling the library, cramming with textbooks and notes, but for the College of Coastal Georgia Culinary Arts students, cramming is replaced by scrambling in the kitchen to prepare a memorable menu as the ultimate test of what they have learned.

This year, their talents and hard work will be graded and displayed through a dinner being presented on Sunday, April 26, at Halyard’s Restaurant on St. Simons Island. The $75/person four-course dinner includes wines specifically selected to complement the menu selections. A cash bar will also be available for pre-dinner cocktails when appetizers of Gazpacho Shooters, Shrimp Cocktail and Mini Pork Sliders will be passed.

Diners will have their choice of Caprese Salad with House-made Mozzarella and Balsamic Crema or a Roasted Tomato and Red Pepper Soup with a dollop of Créme Fraiche.

Main course selections include Duck Osso Bucco with Pecan Butter, Salmon with Blistered Tomatoes, a Center-cut Pork Chop with Garlic Mustard Butter, Steak au Poivre, and a vegetarian option of Fried Green Tomatoes with a Mushroom Ragout and Sautéed Leeks. Sides of Fingerling Potatoes and Asparagus will also be served.

The featured dessert will be Banana Pudding Ice Cream with Chocolate Whoopie Pies.

Reservations for the traditional capstone dinner can be made by calling 912.279.5930. The available seating times range between 6 p.m. and 7:15 p.m. Pre-payment is required and reservations are limited for what is typically a sold-out, stellar event.
